South Africa’s Donaldson Madubela lit up the kitchen at the 2025 Global Chefs Challenge in Sharjah, showing that African food deserves a seat at the table among the world’s most celebrated culinary traditions. His brilliance was on full display during a high-stakes semi-final challenge that featured halibut, veal, mango, dark chocolate, and Earl Grey tea. While the challenge proved daunting to many, Madubela was unfazed. He stuck to his roots and, through a combination of global techniques and local ingredients, showcased the beauty of African cuisine on the global stage. Drawing from his seafood-loving roots and more than 15 years of experience, he delivered refined, authentic dishes with heart. His Earl Grey Malva pudding was a standout homage to SA’s pantry. For Madubela, food is connection, identity, and legacy—now mentoring young chefs to carry that vision forward.
